Pick the shape, pick the sauce, then add whatever you want on top. That is the whole system, and it is why no two orders at the counter look the same.

Six shapes: penne, rigatoni, spaghetti, fusilli, bigoli and fettuccine. Gluten-free penne is available, cooked in separate water.

Sauces split into tomato-based and creamy, from Pomodoro e Basilico and Arrabbiata through to Carbonara and Gamberi. Extra toppings include meatball, chicken, pancetta, prawns, mushroom, broccoli, burrata, mozzarella and Parmesan.

Every shape is extruded here in the morning from semolina and water. No additives, no preservatives, nothing frozen, nothing reheated — your plate is cooked when you order it.
