Aubergine cooked down into tomato and basil, finished with ricotta. Sicily's most-copied pasta, and one of the few vegetarian dishes on the menu that eats as heavily as a meat sauce.

The pasta is made on the premises each morning and boiled to order — no dried pasta, no holding tray. Vegetarian.
